
1) Easy Tilapia Recipe
Ingredients:
1 1/2 cup of white wine
Olive oil to taste
Thin slices of lemon
Italian bread crumbs
Pepper to taste
Directions:
Place tilapia in large pan.
Sprinkle olive oil on top.
Cover with several slices of lemon, bread crumbs and pepper.
Cover with wine.
Combine all ingredients over low heat, cover, and bring to simmer..
Simmer until the meat starts to separate at top. Be careful not to over cook. Remove from heat and sprinkle with a few capers.
2) Tilapia In Beer Batter Recipe
Ingredients:
4-6 Tilapia fillets
Juice of ½ lemon
2 Tbls. chopped parsley
2 Tbls. cooking oil
Salt and freshly ground pepper
Oil for deep frying
BEER BATTER
2 large egg yolks
½ cup beer
½ cup flour
½ tsp. salt
½ tsp baking powder
Directions:
Cut fillets into 2" pieces.
Put in a bowl with lemon juice, parsley, 2 Tbls. cooking oil, and salt and pepper to taste.
Heat oil for deep frying.
Dip pieces of fish individually into batter, and then into hot oil.
Cook, turning and submerging pieces in the oil until golden brown all over.
Drain on paper towels.
Makes 4 servings.
3) Pecan Crusted Dijon Tilapia Recipe
Ingredients:
4 tilapia filets
1/2 cup mayo (not low fat)
1/4 cup Dijon mustard
1 tsp. butter (or Pam spray)
1/4 cup finely chopped pecans
Directions:
Spread butter on metal baking pan.
Place filets on pan.
Combine mayo and Dijon and spread on filets.
Sprinkle with pecans.
Bake at 375 for about 10 minutes unless filets are extra large, then add about 2 minutes.
4) Baked Tilapia in Garlic and Olive Oil Recipe
Ingredients:
4 tilapia fillets, 4 ounces each
4 cloves garlic, crushed
2 tablespoons olive oil
1 onion, finely chopped
¼ teaspoon cayenne pepper
Directions:
Rub the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish.
Spoon the olive oil over the fish until they are coated.
Place the onion on top of the fish.
Cover the fish and refrigerate overnight to allow the fish to soak in the marinade.
Preheat the oven to 350 degrees F (175 degrees C).
If baking the fish, transfer it to a 9x13 inch baking dish along with the olive oil, garlic, and onion.
Sprinkle the fish with the cayenne or white pepper.
If you are grilling the fish, wrap the fish and oil, garlic, onion, and pepper in aluminum foil.
Bake at 350 degrees F (175 degrees F) for 30 minutes.
5) Caribbean Grilled Tilapia With Mango Salsa Recipe
Ingredients:
4 fresh tilapia fillets
1/2 cup extra virgin olive oil
1/3 cup white wine
2 teaspoons Caribbean jerk seasoning
1 tablespoon dried parsley flakes
8 ounce can sliced pineapple in its own juice
Salsa
2/3 cup chopped mango
2 tablespoons fresh squeezed lime juice
2 tablespoons fresh squeezed orange juice
4 rounded teaspoons jalapeno peppers very finely chopped
4 rounded teaspoons finely chopped red onions
2 rounded teaspoons finely chopped red bell pepper
2 rounded teaspoons finely chopped green bell pepper
1 teaspoon dried parsley flakes
1 teaspoon freshly ground black pepper
Directions:
Mix olive oil, wine and parsley then marinate fish in the mixture for 1 hour.
Place fish on well oiled hot grill.
Sprinkle fish with half of the jerk seasoning and half of the pineapple juice.
Baste some of the oil marinade on the pieces of fish.
Place pineapple slices on grill as well.
Turn fish over and sprinkle with remaining seasonings.
Add pineapple juice and oil marinade as on first side.
Flip pineapple slices.
Serve fish with pineapple slices and top with mango salsa.
To make salsa mix all ingredients well and refrigerate for an hour or more before serving.
